Aromas are chemically very diverse, impart a wide range of favourable and unfavourable sensations to the human nose, and have a wide range of sensory thresholds. Conventional analytical technologies (based on, for example, gas chromatography or GC–MS) lack the time resolution, responsiveness, and comprehensiveness of analysis required to provide rapid feedback on aroma analysis for product developers, quality managers, and process-line operations.

Direct analysis with MS, such as selected ion flow tube mass spectrometry (SIFT-MS), can provide excellent results for aroma analysis. SIFT-MS is a revolutionary direct analysis technology that can be used for fast, sensitive, selective, and robust analysis of aroma compounds in air and headspace at trace levels.
