HPAE-PAD is one of the most employed techniques for carbohydrate determination for routine monitoring or research applications. The compatibility of electrochemical detection with gradient elution allows mixtures of simple sugars and oligo- and polysaccharides to be separated with high resolution in a single run. This technique has great impact on the analysis of oligo- and polysaccharides, including prebiotics.
Prebiotics are non-digestible ingredients that beneficially affect human health by selectively stimulating the growth of one or a limited number of bacteria in the colon. Examples of prebiotics include fructooligosaccharides (FOS), galactooligosaccharides (GOS), and inulins. HPAE-PAD provides valuable insights for the selective determination of short-chain FOS and inulins present in the prebiotic food ingredients to determine their degree of polymerization and isomers. Determination of the degree of polymerization of a particular prebiotic ingredient is very critical towards its intended use as it influences some intrinsic properties such as prebiotic activity, digestibility, caloric value, sweetening power and water binding capacity.
