Saffron is one of the oldest and most expensive spices, which is often target of fraudulent activities. In this research, a new strategy of saffron authentication based on metabolic fingerprinting was developed. An extraction procedure was optimized using solid liquid extraction, and a novel detection approach using differential ion mobility separation techniques (SelexION technology) in addition to high resolution LC-MS/MS was developed for analysis. Identification and monitoring of unique metabolite markers made it possible to effectively to identify country of origin for assorted saffron samples. This presentation will show how 2- and 3-dimensional analytical techniques using LC-MS/MS can be effectively applied for food authenticity and fraud monitoring.
